*History of Black Wagyu Beef (Hitachinugyu)

In 1833 (Tempo 3), Prince Nariaki Tokugawa established Sakurano Farm in Mito, and there is a record of black cattle being bred there. However, it was not until 1957 (Showa 34), when 250 head of bred cattle were introduced to Takahagi City and Ogo Town, which were located in the horse production area, that black Wagyu cattle were introduced in earnest.

The term "Hitachi-gyu" refers to black Wagyu cattle that have been bred in Ibaraki Prefecture for the longest period of time by a designated producer, and that are certified by the Ibaraki Prefecture Hitachi-gyu Promotion Association as having a yield grade of A or B and meat quality grade of 5 or 4 or higher by the Japan Meat Grading Association's carcass transaction standards.
